Tomato Pie

Serve with Stevenot Petite Sirah

Serves 8

1 9-inch pie crust
3 large ripe tomatoes, sliced
½ cup chopped green onion
1 teaspoon each: fresh basil, fresh oregano, and garlic powder
1 cup Cheddar cheese, grated
1 cup mayonnaise

Bake the pie crust in a preheated 400 degree oven for 7 minutes. Remove from oven and cool slightly. Layer sliced tomatoes and chopped onions in the pie shell. Sprinkle with oregano, basil and garlic powder. Mix cheddar cheese and mayonnaise until blended. Spread on top of the pie. Bake in a 350 degree oven for 30 minutes.
