Stevenot Sima (Stuffing) for Turkey

For small turkey or recipe must be doubled for average turkey.

1 onion chopped
4 T olive oil
2 T butter (can substitute olive oil)
2 cloves garlic pressed
2 packages frozen chopped spinach, drained
½ C chopped parsley
5 eggs (or 7 egg whites)
2 C bread crumbs
¾ C grated Parmesan cheese
Dash of basil, salt, and pepper
1 C Stevenot white wine

Sauté onion in oil and butter. Add garlic. In large bowl, add other ingredients and mix well. Stuff turkey and bake as director or bake separately covered in oven at 350 degrees until firm.
