Roasted Honey Pears with Crème Fraiche

4 tablespoons honey
6 small, firm, ripe Comice pears, peeled, halved, and cored
5 sprigs fresh thyme
2 tablespoons unsalted butter, cut into pieces
Pinch of salt
1 small container crème fraiche

Heat 2 tablespoons honey in a large skillet over low heat until it begins to reduce and caramelize, about 10 minutes. Add pears, flat-side down. Cook until golden brown around the edges, about 15 minutes. Remove pan from heat. Place pears in a roasting pan flat-side up. Scatter 3 sprigs of thyme on top. Roast in a preheated 350 degree oven until tender, about 25 minutes.

Heat remaining honey and thyme sprigs in a saucepan over low heat. Slowly whisk in butter and salt. Drizzle honey-butter mixture over pears.

Add a dollop of crème fraiche to each serving.

Serves 6.
