Mâche Greens With Feta & Beets

1 lb. Mâche
3/4 cup Beets (pickled or garlic marinaded)
1/2 cup Crumbled Feta Cheese
1 Medium Mandarin Orange (squeezed)
1/4 cup Olive oil
3 Tbs. Balsamic Vinegar

Place mâche, feta and beets in a large salad bowl and set aside. Squeeze mandarin orange and discard any seeds, place in a small bowl, add olive oil and balsamic vinegar and wire whip until blended. Add to salad and toss lightly.

Serves 6-8.
